The Ultimate Comfort Bake! 🍌
This is me with my Crowborough Communitry Pantry hat on, using overipe donated bananas to create a traybake to give out tasters at tomorrows farmers market.
There’s something about overripe bananas that makes them perfect for baking—soft, sweet, and just waiting to be transformed into something delicious. This Sticky Toffee Banana Traybake is a moist, fluffy, and indulgent cake, topped with a sticky toffee glaze that adds the perfect touch of sweetness. It’s simple to make and an absolute treat for any occasion!
Adapted from a Sainsbury’s Magazine recipe, with a few tweaks to make it even better!

Ingredients You’ll Need:
For the cake:
4 ripe bananas (about 600g unpeeled, 400g peeled weight)
1 tbsp lemon juice
150g soft butter
150g golden caster sugar
1 tsp vanilla bean paste or extract
3 large eggs
200g self-raising flour (adjusted)
1½ tsp baking powder
¼ tsp fine sea salt
For the sticky toffee glaze:
40g butter
80g golden syrup
3 tablespoons water

Let’s Get Baking!
1️ Preheat & Prep
Preheat your oven to 180°C (fan 160°C, gas 4).
Grease and line a 20cm square cake tin with baking paper.
2️ Mash & Mix
Beat the overripe bananas with a whisk until smooth, or mash with a fork if you prefer a chunkier texture.
Slice the remaining bananas and toss them with the lemon juice to prevent browning.


3️ Cream & Combine
Beat the butter and sugar together for about 5 minutes until pale and fluffy.
Add the vanilla extract and mix well.
Beat in the eggs, one at a time, adding 1 tbsp flour with the second and third egg to prevent curdling.

4️ Fold & Bake
Sift in the remaining flour, baking powder, and salt, then fold it into the mixture.
Gently stir in the mashed bananas.
Pour the mixture into the prepared tin and dot the sliced bananas over the top.
Bake for 45 minutes, or until a skewer inserted in the centre comes out clean.
5️Make the Sticky Toffee Glaze
In a small saucepan, melt the butter, golden syrup, and the 3 tbs water over low heat.
Bring to a boil for 3 minutes, then quickly remove from heat and beat until smooth.

6️ Glaze & Enjoy
Pour the warm glaze over the cake, tilting the tin to spread it evenly.
Leave to cool completely, then remove from the tin and cut into squares.

This banana traybake is soft, rich, and packed with flavour—the perfect balance of sweet banana goodness and buttery toffee glaze. It keeps fresh for up to 5 days in an airtight container or can be frozen for later!
