Fresh Halibut from Veasey and Sons: A Quick & Delicious Midweek Dinner

One of the joys of cooking is finding simple, fresh ingredients that come together to create a delicious, satisfying meal. This week, I had the pleasure of getting fresh halibut from Veasey and Sons in Forest Row, and it has quickly become one of my favorite midweek dinners!

This recipe is perfect for those evenings when you want something light but full of flavor, and it’s incredibly easy to prepare. The halibut is seasoned with Parmesan, garlic, paprika,lemon, salt and pepper, then popped into the air fryer for a quick 6-8 minutes at 170°C.

The result? A golden, crispy crust that contrasts perfectly with the tender, flaky fish inside.




Here’s the recipe for this quick and delicious dish:

Ingredients:

  • Fresh halibut fillets (I used a couple from Veasey and Sons)

  • 2 level tablespoons grated Parmesan cheese

  • 1/2 teaspoon garlic granules

  • 1/2 teaspoon sweet paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 slices of lemon

Instructions:

  1. Lightly grease your air fryer basket or line it with parchment paper.

  2. Place the halibut fillets directly into the lightly greased air fryer basket or onto the parchment paper.

  3. In a small bowl, mix together the Parmesan cheese, garlic powder, paprika, salt, and pepper.

  4. Press the seasoning onto the top of each halibut fillet, ensuring it's evenly coated.

  5. Top each fillet with a slice of lemon.

  6. Air fry the fish at 170°C for 6-8 minutes until the fish is cooked through, golden on top, and flakes easily with a fork, or has an internal temperature of 60°C

  7. Serve with a side of steamed vegetables and mashed potatoes for a complete meal.


This simple yet flavorful dish pairs wonderfully with the fresh, vibrant vegetables and creamy mashed potatoes. It’s the perfect way to enjoy fresh, locally sourced fish in no time at all, and with the air fryer doing most of the work, it’s ideal for busy weeknights.
